Easy Summer Pasta Salad

Pasta salad is a staple for summertime dinners at our house. It’s a great way to get lots of veggies into the kids, without much whining!

This recipe is super easy to change up. Use the veggies your family likes most. Change the salad dressing – Italian works great, too. Change the protein – bacon, chicken, pork…whatever!

If you hold the protein and add it only when you are ready to serve, your leftovers will keep better! The quickest way to keep my kids from eating leftover pasta salad is having soggy bacon – gross!

Ingredients
  • 1/2 Red Onion chopped, finely
  • 1 C Frozen Corn
  • 1 C Frozen Peas
  • 1 Red Bell Pepper chopped, finely
  • 3 Carrots chopped, finely
  • 1 Cucumber chopped, finely
  • 1 C Small Tomatoes chopped, finely
  • 1 package Small Pasta Shells
  • 1 package Ranch Dressing Mix
  • 2 T Miracle Whip
  • 1 package bacon 2 pieces of bacon/serving

Instructions
  1. Boil pasta (small shells) according to package directions.
  2. Chop your favorite veggies. We use red onion, corn, peas, red bell pepper, carrot, cucumber and tomato.
  3. Drain pasta (once done) and then toss in veggies. The heat from the pasta takes the edge off the onion, cooks the corn slightly and thaws the frozen peas.
  4. Add favorite salad dressing. We use a ranch dressing package and a little bit of Miracle Whip.
  5. Add the meat of your choice. We normally do bacon or chicken.
  6. Enjoy a delicious pasta salad with your family!
